Oreo Cupcakes!



Hi Guys!!



So today I am going to be showing you how to make some Oreo Cupcakes!!

So lets get right into it ....



To make these yummy cupcakes you will need...

For the cakes

  • 200g plain flour                      
  • 40g cocoa powder 
  • 280g caster sugar 
  • 3 stp baking powder
  • pinch of salt
  • 80g unsalted butter 
  • 240ml milk
  • 2 eggs
  • 1/2 tsp vanilla extract 
  • 12 Oreos
  • lots of mini Oreos
  • 12 muffin cases
For the frosting
  • 100g unsalted butter 
  • 160g cream cheese
  • 350g icing suger
  • 6 Oreos 
You will also need a big mixing bole, a wooden spoon, an electric mixer, a piping bag, baking tray, measuring spoons and some normal spoons

Before you start you need to preheat the oven to 170C/160fan. Then, line a muffin tray will muffin cases, then half some Oreos and put them in the bottom of the cases with any with cream on facing up like this...




Next, put the flour, sugar, cocoa powder, baking powder, salt and butter in a big old bole and mix it until you get an almost sandy consistency and everything is mixed.
Then, whisk the milk, eggs and vanilla extract in a separate bole (soz forgot to mention that earlier!) then slowly add to the main mixture and mix well to get rid of any lumpy bits. Then gradually add the rest of the mixture and mix until smooth.
The add the mixture to the muffin cases so they are about 2/3 full, then bake them for 20 to 25 minutes 
Whilst the muffins are baking put 6 Oreos in a sandwich bag like this.....



Then mash them with a rowing pin until they are really tiny pieces. I can not stress enough that the pieces need to be REALLY small otherwise when you try to pipe the icing it wont work!
Next, whisk the butter, cream cheese and icing sugar until its all fluffy, then plop in those Oreos

One the cakes are done, let them cool on a cooling rack them pipe the icing on them and add some mini Oreod on top for decoration
